a year of {celebration} pancake day + soaked pancakes: a real food recipe

PancakeDay6_copy-1in the spirit of celebration the littles and i decided to throw a little mini-pancake party this past tuesday morning.

PancakeDay7_copywe invited a dear friend and his sweet momma (who, by the way, took all of these gorgeous photos… talented doesn’t even begin to cover it) over for coffee + milk and put together a simple, but oh so yummy pancake bar to celebrate this very british holiday!

PancakeDay2_copyadmittedly, since we are all at least half-american, we went for american-style rather than crepe style pancakes, but we didn’t think anyone would mind.

PancakeDay3_copyin keeping with our real food lifestyle i made some soaked buttermilk pancakes (recipe below) and the kids helped me put together the toppings bar complete with kiwi, banana and apple cinnamon topping with a big jug of maple syrup to drizzle over all.

i am so glad we decided to start celebrating the small things throughout the year. it has been so special, created lots of fun and is making some fabulous memories for the future!

soaked buttermilk pancakes: a real food recipe

(soak 1 3/4 cup flour in 2 cups of buttermilk, yogurt or milk kefir overnight)

in the morning add 2 eggs, 1/4 cup coconut oil or butter, 2 Tbsp brown sugar (or honey), 2 tsp baking powder, 1tsp baking soda and 1/2 tsp salt. stir until just combined.

put a frying pan or skillet on medium heat, add a bit of butter and pour about 1/4 cup of batter per pancake into the pan. cook about 2 minutes or until edges look cooked and bubbles begin to break on surface. flip the pancakes and cook until golden brown.

to keep the cooked pancakes hot while i finish making the others, i like to stick them on an ovenproof plate and put in the oven on the lowest heat setting possible.
