this morning i woke up super hungry. like the kind of hungry only the third trimester of pregnancy can bring: intense and specific. and as much as i tried to love the idea of a healthy smoothie, i couldn’t get fried eggs and bacon or muffins or cheese out of my brain. so when i found this adorable–and frankly ingenious–little muffin idea on marthastewart.com i was beyond thrilled.
a few tweaks to the original recipe and we have maybe the most adorable real food recipe yet!
how to do it:
turn your oven on to 180 degrees (375 degrees for the yanks). grease your muffin tin with organic butter. flatten 6-8 sourdough bread slices with a rolling pin and using a round cookie cutter, cut into 8 rounds. cut each round in half, then press 2 halves into each muffin cup, overlapping slightly and making sure bread comes up to edge of cup. use extra bits of bread to patch any gaps and brush bread with a bit more melted butter. *note: the density and unusual shape of sourdough bread makes these a little leas ‘pretty’ but hey ho!*
next, either fry up some happy bacon on a medium heat until just crispy, or (like we did this morning) grill up some happy sausages. but cook until only slightly brown as they will cook more in the oven! lay 1 bacon slice in each bread cup (or cut a sausage in half and lay into each bread cup), add a pinch of grated raw cheese into the cups and crack a happy egg over each. season with salt and pepper and bake until egg whites are just set, about 15-20 minutes. i grated a little raw cheese over the top too and presto! super cute, super healthy, super quick breakfast. what more could a momma ask for?

hi susan! i liked the bacon ears too! admittedly the sausages we used this morning didn’t look as cute but we are excited to use bacon next time to get that silly look. 🙂
